Peter's story

Twenty-two years of watching what a good edge actually does.

Peter spent more than two decades in professional kitchens, where a knife is a working tool and its condition is felt every shift. That is where the practical relationship between kitchen performance and properly maintained knives became second nature.

The problem Peter saw

Knives treated as generic transactions.

Knives went out, came back sharper, and nobody said much else. Owners were often unclear about what their knife actually needed or what had been done to it. Two very different knives received exactly the same treatment.
